Learning how to sell to bakeries starts with the rhythm of the trade: the baker works through the night, the shop is packed in the morning, at lunch and after work, and nobody will listen to you outside the quiet hours. This guide is for flour mills, ingredient wholesalers, packaging, oven and display suppliers, POS vendors and service companies selling to French and Belgian bakeries: market size, targeting, timing, scripts and objections.

Why bakeries are a strong market

The bakery is the most widespread food shop in France, and the French boulangerie is something of an institution. Prospya lists 27,281 bakeries and pâtisseries across France and Belgium, 26,124 with a phone number and 12,428 with a checked email address (46%). Any town of reasonable size has at least one, usually several.

Bakeries buy constantly: flour, butter, yeast, chocolate, bags, cake boxes, lab equipment, refrigerated displays, tills, card terminals, oven maintenance, cleaning, insurance. Volumes are steady, and once a supplier is in, it often stays for years.

Artisan bakeries are nearly always family or couple-run businesses. A common pattern: the baker or pastry chef in the bakehouse, a partner running the shop and much of the admin. Working out who decides what is your first job.

What you sell Who usually decides What convinces them
Flour, ingredients The baker Consistency, steady quality, reliable delivery
Packaging, bags, boxes The person running the shop Price per thousand, lead times, custom print
Ovens, mixers, refrigeration The baker Energy savings, fast repairs
Till, payments Both, often the shop Speed at rush hour, sales tracking
Website, online orders The shop Cake and party orders without phone calls

Bakeries by city

If you deliver, think in delivery rounds. Big cities bring volume; surrounding towns get pitched less and sometimes respond better.

City Bakeries With phone With email No website
Paris 1,014 860 308 432
Marseille 334 297 102 167
Lyon 251 233 102 74
Toulouse 183 174 65 76
Nice 179 170 66 83
Strasbourg 150 143 72 44
Nantes 150 143 64 48
Bordeaux 135 125 63 36

Figures are computed live from the Prospya database and update automatically. Worth noting: 13,236 bakeries have no website (49%). The phone remains the trade's main channel.

Targeting the right bakeries

Not every bakery is a good prospect for you. A neighbourhood bakery baking everything on site has different needs from a bake-off outlet finishing delivered dough.

Filters that matter

  • Rating and reviews: a bakery at 4.6 stars with 300 reviews has loyal customers and volume, so real needs for ingredients and packaging. Try Lyon bakeries rated 4+.
  • Few reviews: a newly opened shop is equipping itself and picking suppliers, the best moment for equipment and POS sellers.
  • Has email: before an email campaign, filter on Paris bakeries with an email.
  • No website: the target for agencies and online ordering tools, for example Marseille bakeries without a website.

Pastry shops and chocolatiers. Independent pâtisseries are listed with bakeries. Chocolatiers have their own category (3,599 records): very close prospects for couverture, premium packaging or display suppliers, with peaks at Christmas and Easter.

When to call a baker

This is where most campaigns fail. Bakers often start in the middle of the night, and the shop has three rushes a day.

  • Avoid: mornings until about 9:30 (breakfast bread), lunchtime from 11:30 to 1:30 (sandwiches, meal deals) and from 5pm to closing.
  • Best window: 2pm to 4pm. Many shops close or slow down in the early afternoon, and it is often when tomorrow's orders are prepared.
  • Mid-morning (10-11am) also works for reaching whoever runs the shop.
  • Weekly closing day: most bakeries close one day a week, often Monday or Wednesday. Check the record and skip it.
  • The baker personally may have finished their shift by early afternoon and be asleep. Ask the shop when to reach them rather than insisting.

Seasonally, avoid the holiday weeks (Christmas, Epiphany with the galette des rois in January, Easter): everyone is swamped. The weeks right after are good, especially late January and early September. Many bakeries also close for two to four weeks in summer.

What to say: scripts for bakeries

Bakers judge quickly and distrust salespeople who do not know the trade. Show you understand how a bakery works: bakehouse, rounds, seasons, galettes. If you can, make the call in French; at minimum, open in French and apologise for switching.

Cold call (packaging supplier)

"Bonjour, it's [name] from [Embaléo]. I'm calling at this time on purpose so I don't land in the middle of a rush. We supply bakeries in the area with bread bags, pastry boxes and snacking packaging. Who handles packaging orders at your shop? […] Could I drop off samples and our prices per thousand on Thursday afternoon, no strings attached?"

For an ingredient supplier the same structure works with one real detail: "I saw Boulangerie Vercheval has 4.7 stars and lots of reviews about its baguette tradition. We supply artisan bakers with Label Rouge flour, delivered weekly. Would your baker try two free sacks and tell me what they think?"

The goal is a trial or a visit, never an order over the phone. Our cold calling scripts cover the full structure and follow-ups.

Follow-up email

Subject: samples for Boulangerie Vercheval, as agreed

"Hello, thanks for taking my call. As agreed, I'll come by on Thursday between 2 and 3pm with samples and the price list. If that slot does not work, just reply with another day."

Full signature and an unsubscribe link. More in our cold email templates.

With a baker, a sample beats every argument. Offer a trial before you mention a contract.

Prospya's AI writer drafts a cold email, Instagram DM or call script per bakery, based on what you sell and the facts on the record (rating, reviews, missing website).

Typical objections from bakers

Objection What it often means Possible answer
"I already have a supplier" Happy enough, or dislikes change "I'm not asking you to switch, just to compare on one order"
"Call back later" You hit a bad moment "Tomorrow around 2:30, does that work?" and log it
"The boss handles that" You are talking to the shop Ask when they are reachable, or visit early afternoon
"Too expensive" Quality or service not proven Offer the trial, then compare per batch or per month
"No time for a meeting" Long, tiring days Offer a five-minute drop-off at the shop

Running the campaign and follow-up

Selling to bakeries takes several touches: a supplier usually gets in after a few contacts, often after a trial. A routine that works for a field rep:

  1. Prepare: one delivery area, 60 to 100 bakeries filtered for your offer.
  2. Call from 2 to 4pm, three days a week, around twenty a day, every outcome logged: reached, no answer, voicemail, wrong number.
  3. Visit with samples the day after each positive call, early afternoon.
  4. Follow up one to two weeks after the trial to get the baker's verdict.

Prospya's built-in CRM tracks each bakery (to contact, contacted, quote sent, client) with a dated next action and an automatic call-back for the next working day when nobody answers. Teams of up to 10 share credits and pipeline at no extra cost. For the general method, see our guide to prospecting local businesses; for other food-service customers, our article on horeca sales prospecting.

Suppliers and wholesalers will find the whole offer on Prospya for suppliers.

What a campaign costs, and the rules

Search and filters are free. Each bakery you unlock costs 1 credit, only if it has a phone or an email, and a record you already unlocked never costs again. A 300-bakery area is 300 credits: the €9 pack holds 250, the €49 pack 2,000. No subscription, and credits never expire; see pricing.

Calling a bakery's business number about a professional offer is allowed in France: Bloctel protects consumers, not businesses. Emailing its generic address is allowed without prior consent too, as long as you identify yourself and include a simple unsubscribe link. An address in the baker's own name is personal data under GDPR; see our GDPR guide for B2B outreach.

FAQ

How many bakeries are there in France?

France has several tens of thousands of bakeries and pastry shops, one of the densest networks of food shops in Europe. Prospya currently lists 27,281 across France and Belgium, with phone, email where one exists, website and address. Counts update automatically and can be browsed for free city by city on the trade pages before you unlock a single record.

What is the best time to call a bakery?

Between 2pm and 4pm, when the shop is quiet and the team prepares the next day. Mid-morning, around 10 to 11am, also works for reaching whoever runs the shop. Avoid breakfast time, lunchtime and the end of the day, and skip the weekly closing day, which is often Monday or Wednesday in France.

How do I become a supplier to bakeries?

Offer a free trial or samples rather than a contract. Call in the early afternoon, find out who decides for your type of product, then visit the shop with samples and prices. Follow up one or two weeks later to hear what the baker thinks. Reliable delivery usually matters more to a bakery than a few cents on the price.

How can I find a bakery's email address?

Sometimes it is on the bakery's website or social profiles, but many bakeries have no website at all. A database like Prospya groups each bakery's phone, email with a checked domain, website and Instagram account, and lets you filter on bakeries that have an email before you start a campaign, so you only pay for records you can actually reach.

How much does a bakery email list cost?

On Prospya, searching is free and you only pay for the bakeries you unlock: 1 credit per record with a phone or an email. The €9 pack gives 250 credits, €49 gives 2,000 and €149 gives 10,000, about €0.015 per contact. There is no subscription, credits never expire and you get 25 free credits at sign-up.
